Woollahra’s popular Buzo finds a fresh face as Jersey Road Bistro (Sydney)

Woollahra’s Buzo is taking on a new name for a new chapter, recently transforming into Jersey Road Bistro, a new venture led by Head Chef Jason Dean. Chef Dean, along with Sous Chef Chris Cho (ex-Oscillate Wildly), have elevated the food from its Italian roots to a modern bistro style menu, focusing on Australian producers and ingredients with modern cooking techniques, attempting lighter, more relaxed dishes at affordable prices.

Owners of the revived Bistro, Mark Campbell and Phillip Fikkers, have witnessed first-hand the rise of bistro dining in Sydney – they also own the iconic Macleay St. Bistro in Potts Point. “The demographics in the area have changed,” says Fikkers. “There are more families now. Buzo was fine dining. We want Jersey Rd Bistro to be a casual, mid-week destination for locals, and a place to celebrate on the weekend.”

Jersey Rd. Bistro brings with it the introduction of a unique Sunday Brunch menu from 10am to 3pm. Locals and visitors can enjoy dishes such as fried duck egg with duck jerky, spiced quinoa, pumpkin and shallot, and mushroom omelette, asparagus, smoked onion and parmesan. All paired with fresh juices, Bloody Mary’s, Pol Roger and Belgium Beer.

Dean focuses on light fresh flavours rather than drenching dishes in heavy, buttery sauces. Start with snacks of red cabbage crackers with parmesan custard and Smoked fish fingers with rosemary mayonnaise. Mains include roasted lamb rump with potato, zucchini, macadamia and mint, and confit kingfish with black lentils, celery, sour cream and radish. For the indecisive there is Bistro Banquet, a seven-course selection designed by Chef Dean that gives you a taste of all the highlights for just $75 per person.

Jersey Rd Bistro boasts having all the classic cocktails offer a BYO option for those wanting to dine with their favourite wines. The bar menu is now available until midnight, so you can pop in for late night snacks and drinks on your night out.

The Bistro allows patrons to wander up to the rooftop to take in the urban garden with seasonal herbs and organic vegetables including pea shoots, heirloom tomatoes, heirloom radish, mint and basil all used throughout Chef Dean’s menu. Campbell and Fikkers wanted to provide locals with a place to dine for an affordable mid-week meal, a weekend celebration or a Sunday brunch down the road. Dean’s relaxed, Modern Australian Bistro menu promises to please Buzo regulars and new customers alike.
