The Dolphin Hotel has launched an Aperitivo Hour series with guest chefs, snacks and wine (Sydney)

After unveiling a new era last year and subsequently rising through the ranks to become one of the area’s hottest spots, The Dolphin Hotel in Surry Hills will be using their dedicated Wine Room as a platform for a guest chef series fashioned as “Aperitivo Hour”. The series, which kicked off early last month and will continue up until the end of July will see various collaborations with some of Australia’s top chefs and restaurants – both casual and not-so-casual – as every week brings in a fresh face to handle “super-value” snacks to pair up with well-priced drinks. There’ll even be a few chefs from overseas.

Executive Chef Monty Koludrovic and Wine Director James Hird set up the wine room to be a true beacon of classic hospitality in Surry Hills, shaping up a space where everyone, from the public to chefs to winemakers, can drop by and dive into a world of wine and paired snacks. It’s a notion completely reflected in this dynamic series, which will take place every Sunday to Thursday from 5pm-7pm daily, with prices from $5-$7; the happiest of happy hours.

Each guest chef will be invited to create their own snacks for their Sun-Thurs block, taking up a short residency in the kitchen and also joining guests for wines and dinner afterwards. It started with the inimitable Good Luck Pinbone team on 9th April and will wrap up with Daniel Pepperell of award-winning Restaurant Hubert on 23rd July. In between will be a who’s who of Sydney hospitality including, but not limited to: CJ Wells (Automata); David Moyle (Franklin); Mitch Orr (ACME); Paul Carmichael (Momofuku Seiobo); and Louis Tikaram (EP & LP Restaurant in L.A).

The penultimate residency will include a party led by the team behind one of Western Sydney’s most valuable burger joints, Superior Burger. We’re expecting some good burger and wine pairings to come out of that! See below for the full schedule of guests.

A specially made menu consisting of special snacks and equally curated selection of 5-6 drinks (including wines poured by their makers) will appear with each guest residency. All items will be either $5 or $7.
