Hartsyard’s famous fried chicken gets a dedicated restaurant with Wish Bone (Sydney)

Fried chicken fiends have been flocking to Wish Bone since the long-awaited restaurant opened at the former site of The Gretz on Enmore Road. Though their award-winning bar is no more, the Hartsyard team have a guaranteed winner on their hands with this new venture, which puts the focus on the jaw-droppingly good fried chicken that was first made famous at nearby inner west dining favourite Hartsyard.

Wish Bone, which is all about quick-service and good, soulful feasts, will serve up Gregory Llwellyn’s smoky chicken alongside a few other excellent options, including a Birdy Sando with iceberg lettuce, American cheese, mayo, hot sauce and pickles on a steamed butter bun. Hungry diners can get the chicken in either 2, 4, 6 or 8 pieces, and then fill the table with sides like poutine (meat or veggie option), mac ‘n’ cheese, creamed corn, biscuits & gravy, coleslaw, and more.

With slushies and spiked thickshakes on the menu alongside pre-batched cocktails, it’s looking like Wish Bone is a sure-shot for one of 2018’s best openings. It’s surely going to go down as one of the most attractive as well, with a mechanical inspired interior borrowing heavily from the motoring world thanks to a partnership with YouTube sensations Mighty Car Mods, who have handled the bar’s muscular redesign.
