Australian Technology Park welcomes Charlotte’s Little Sister to the family (Sydney)

Coffee connoisseur Jason Ghebar has been building up the Charlotte brand (with Charlotte Cafe, Charlotte’s Little Sister and Baby Charlotte) since 2008.  What started as a single cafe in Birchgrove then branched out to Manly, Pennant Hills and Mosman, and now the newest member of the Charlotte brand makes its way to the Australian Technology Park, located on Central Avenue, Everleigh.

Says Ghebar, “Charlotte’s Little Sister, ATP will be the first bit of community this area has seen, dedicated to superior service, great food, and exceptional coffee. The support and response we have received since conception is overwhelming, and we hope to create a social hub for those working and hanging out in the area. We understand that a break is necessary during a busy working day, and there is no better way to catch up with friends or colleagues than over good food and coffee”.

With styling and design by India Harris and Guru Projects respectively, Charlotte’s Little Sister will bring a breath of fresh air to the iconic ATP site.  This is a sentiment echoed by Rafael Bartowski, Director of Campos Coffee, a valued supplier to all Charlotte’s cafes.  “Soon to be a heaving Inner West destination for all those in the area, Jason, and his team has managed to combine great coffee and great food into a great space, living and breathing cafe where quality and consistency speaks for itself” he says.

The 160-seat cafe and bar will feature custom-made mosaic tile flooring form Italy, brass paneling and raw timber throughout the venue.  A La Marzocco Coffee Machine, complete with handmade steamer arms, metal badges, cronos touch pads and personalized logo, was acquired at auction to raise funds for Fareshare and Café Smart.

The menu, created by Rob Clarson (ex-Sugar & Spoon and with ties to Gordon Ramsay) and Jimmy Mathers (ex Pavel & Co and Pony Dining) will champion rotisserie meats (cooked slow, served fast!) that can be enjoyed with a signature array of sauces, fresh salads and organic bread.

Diners can have breakfasts on the run with a Campos Coffee, washing down a fruit salad with paleo crunch and coconut yogurt ($9) or they can hunker down and enjoy a BBQ bacon and egg roll with thick-cut smoked bacon, two free range eggs, smokey BBQ sauce on a freshly baked roll ($11).

Lunches at Charlotte’s Little Sister will be the perfect escape from the office.  Rotisserie meats and salad wrapped in rolls are great for a quick bite, and there’s also the choice of salads and plates with protein and brown rice.  A sure-fire crowd fave will be the 8-hour cooked grain fed pork belly, rubbed with fennel and served with crispy crackling, South American slaw, brown rice, jus or salsa criolla ($16.40).  Give some rotisserie pork, served in a bun and topped with apple and Szechuan pepper puree, five spice BBQ sauce, carrot, red cabbage, red onion and parsley ($13) for a really flavourful meal!

Other great items on the menu include the signature Charlotte favourites, where Mama Helen’s influence shines through in the house-made falafel roll with eggplant puree, cucumber yogurt, carrot, cos, lettuce, shallots and parsley ($12), and the grass fed Za’atar Lamb shoulder roll ($10). There’s also a delicious side to try in the spiced cauliflower and eggplant salad with pickled currants, kale, coriander, mind, almonds and Mama’s tahini ($9.90).

A bar menu is also being created, and will feature a range of cocktails and boutique beers and wines by the glass.
