Sister restaurants Mister Bianco and Massi plan truffle dinners for August (Melbourne)

With two restaurants now open across Melbourne – Kew hotspot Mister Bianco and fresh face Massi – Chef Joseph Vargetto and his teams have decided to embrace Australia’s truffle season by launching a new dinner series celebrating everyone’s favourite fungi this August. The exclusive truffle events will run over four nights, marrying the sought after ingredient with Vargetto’s hearty Sicilian food, presenting a one-night-only five-course degustation at Mister Bianco and a series of Stuzzichini style events at Massi.

Across four evenings, Vargetto will be showcasing the many ways the rich flavours of WA sourced Terra Preta truffles can be used with authentic Sicilian ingredients, offering up dishes like spelt rabbit and corn ravioli with kale and pecorino broth, and slow braised ox shortribs in orange, pasnip crema with crispy proscuitto, featured in the five-course degustation at Mister Bianco.

Massi are planning a casual Stuzzichini event for their part in the truffle series, enhancing their dishes with truffles to result in plates like the Agnolotti, chicken, brown butter, and truffle, and the Alta badia “raclette style” with vegetables and proscuitto cotto.
