Recipe: Gourmet Garden’s Creamy Chicken Curry

Chances are you already have a couple of packets of Gourmet Garden Lightly Dried herbs and spices on hand. These products are simple and convenient ways to capture the flavour of herbs without sacrificing any of that freshness that comes with chopping the herbs yourself. To showcase the authenticity and ease of use of Gourmet Garden Lightly Dried herbs, the AU have been permitted to publish some of their incredibly tempting recipes.

Creamy Chicken Curry (Serves 4)

Preperation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients

  • Vegetable oil or butter (1 teaspoon)
  • Mustard seeds (1 teaspoon)
  • 1 large red onion (finely chopped)
  • Chicken breast or thigh (650g-750g; very finely sliced)
  • Gourmet Garden Lightly Dried ginger (1 teaspoon)
  • Gourmet Garden garlic stir-in paste (1 teaspoon)
  • Gourmet Garden Lightly Dried chilli (1/2 teaspoon)
  • Gourmet Garden Lightly Dried coriander (1 teaspoon)
  • Can of chopped tomatoes (1 x 400g)
  • Turmeric powder (1/2 teaspoon)
  • Garam masala powder (1 teaspoon)
  • 3 whole cloves
  • Handful fresh curry leaves, or use a tablespoon dried 125ml coconut milk or plain yoghurt
  • Pinch of Gourmet Garden Lightly Dried coriander, to garnish

Method

  1. Heat and grease a large non-stick pan with a little vegetable oil.
  2. Once hot add the onion and the mustard seeds and allow the mustard seeds to roast and pop a little.
  3. Now add the chicken and allow the first side to brown a little before stirring.
  4. Once half of the chicken is browned, add the remaining ingredients except the coconut milk or yoghurt.
  5. Allow to cook, stirring often, until the chicken is cooked.
  6. You can now reduce the heat and mix the coconut milk or yoghurt in.
  7. Garnish with a sprinkle of the Gourmet Garden Lightly Dried coriander and serve on rice.
