Recipe: Gourmet Garden’s Baked Snapper with Chilli and Ginger

Chances are you already have a couple of packets of Gourmet Garden Lightly Dried herbs and spices on hand. These products are simple and convenient ways to capture the flavour of herbs without sacrificing any of that freshness that comes with chopping the herbs yourself. To showcase the authenticity of Gourmet Garden Lightly Dried herbs, the AU have been permitted to publish some of their incredibly tempting recipes.

Baked Snapper with Chilli and Ginger (Serves 4)

Preperation Time: 10 Minutes
Cooking Time: 25 Minutes

Ingredients

  • 850g snapper fillets
  • 1 teaspoon vegetable oil or butter
  • 1 large red onion; finely chopped
  • 1 tomato; finely chopped
  • 1 teaspoon Gourmet Garden Lightly Dried ginger
  • 1 teaspoon Gourmet Garden Garlic Stir-In Past
  • 1/2 teaspoon Gourmet Garden Lightly Dried chilli
  • 1 teaspoon Gourmet Garden Lightly Dried coriander
  • 6 spring onions; finely chopped
  • 1 carrot; cut into matchsticks
  • 2 teaspoons soy sauce
  • 1/4 teaspoon sesame oil
  • 1 lemon; zested and juiced

Method

  1. Pre-heat oven to 190⁰C.
  2. Mix all the ingredients, except for the fish, in a bowl.
  3. Place fish into a shallow baking tray and then cover with the mixture.
  4. Bake in oven for about 18-25 minutes until the fish is cooked and fragrant
  5. Serve with steamed rice or bok choy.
