One of Hobart’s best restaurants will be popping up at Icebergs (Sydney)

Now that they’ve got The Dolphin Hotel up and running, restaurateur Maurice Terzini and Executive Chef Monty Koludrovic are planning a special collaborative dinner at Bondi institution Icebergs Dining Room and Bar that will welcome in David Moyle of awarded Hobart restaurant Franklin Dining Room and Bar.

Set for Thursday 4th August, the one-night-only dinner will be a rare opportunity for Sydneysiders to experience the flavours of Franklin without having to travel down to Tassie. The menu for the dinner has not yet been confirmed but seeing that Franklin is predominantly focused on fresh seafood – think octopus, calamari, sea urchin, periwrinkles, and clams – we think it’s safe bet to expect Moyle to bring his love of ocean catches to Icebergs.

Minimal intervention wines will be paired up with the three-course menu for the night, showcasing popular wineries Giorgio de Maria and James Hird, along with craft beers sourced from various places as well as Tasmania.
