Matt Moran returns to Paddo Inn with New Grill (Sydney)

The Paddington Inn affectionately dubbed ‘Paddo Inn’ by locals is reigniting an old friendship with renown chef Matt Moran who began his illustrious career there over two decades ago. The Inn which is operated by Solotel gave Moran his first leg up in the industry and was the catalyst for a very prosperous partnership between Moran and Solotel’s Bruce Solomon.

The pair revamped the inn’s dining room last month rebranding it Paddo Inn Bar & Grill after receiving feedback from the locals that the dining room was a bit too flash for their taste. As Moran put it “When we launched seven months ago, we didn’t get the dining room offering quite right, it was too fine dining. We’ve listened to our regulars and made it the Grill they wanted. For me there is nothing better than a great piece of meat or seafood cooked simply and that’s exactly what we are doing at Paddo Inn Bar & Grill.”

Featuring the best of the best in Australia when it comes to beef and seafood, the menu will include choice cuts of rump cap, scotch fillet and t-bone hitting the grill, supplied by Rangers Valley, Darling Downs and Jacks Creek respectively. Other items on the menu involve snapper with greens and verjuice; Berkshire pork cutlet and from the new raw section; salmon gravlax and steak tartare. Casual fare such as salads, sandwiches and burgers  will also be available from the front room. Whilst Moran will be overseeing the venture it will be head chef Laura Barratto, farewelling her post at Chiswick at The Gallery, ensuring the new vision hits the mark.
