Luke Mangan to open Chicken Confidential at Sydney Airport

Luke Mangan has a lot on his plate right now. In addition to bringing an al-fresco dining experience to P&O’s new Pacific Explorer later this month, the respected chef has just announced an expansion for his recently launched Chicken Confidential brand. After debuting in Sydney’s Chifley Plaza earlier this year, the organic chicken burger joint is making its way to Sydney Airport’s T1 International dining precinct come August – a nice addition to the airport’s modernised offering that already includes the likes of Kitchen by Mike and The Bistro by Wolfgang Puck.

Certified organic and free-range Inglewood chicken is the primary focus for Chicken Confidential, putting produce front and centre with a promise to offer consistent, high quality chicken burgers for those heading off or returning through the airport. The shop will be open from breakfast through to dinner each day, featuring the likes of the southern-fried organic chicken ‘Yes Ma’am’ burger and Korean ‘Gangnam Style’ burger with a spicy kick of kimchi mayo. Those who aren’t in the mood for chicken can also grab the ‘Big Cheese’ beef burger and breakfast options including the ‘Never Too Early’ with sausage, bacon, fried egg, avocado, tomato, lettuce and kimchi mayo.

Vegetarians are also considered with the likes of ‘The Virgin’ portobello mushroom burger with mozzarella, caramelised onion, tomato, lettuce and raita. Healthy salads such as ‘Roasted Mixed Vegetables’ with oregano dressing and ‘Australian Grains & Spinach’ with honey mustard dressing, and lighter options like low-carb wraps, lettuce wraps and the smaller ‘Schnitz Jnr’ burger.

Chicken Confidential will also be doing chocolate ice-cream sandwiches, sundaes and soft-serves for dessert
