Exclusive Interview: Burgers by Josh talks about his new menu and new inner-west burger joint

Josh Arthurs, better known as Burger master Burgers by Josh, speaks exclusively to us about his secret new inner-west venue, a new menu and what we can expect from this anticipated residency, which comes following his hugely successful run in North Sydney.

From April 1st the Sydney-based burger artist will be cooking up a storm at the iconic institution that is Annandale Hotel. Once a crucial hub for Australia’s live music scene, the new location is a short ride from Sydney Uni and the CBD, whilst still being accommodating to a new audience in the west.

Service will be available every day of the week with lunch and dinner available Monday to Friday and a special brunch menu available on Saturday and Sunday.

The AU’s Lachlan Mitchell spoke to Josh about the new residency how he’ll top the ridiculously popular Burgers by Josh pop-up which ran twice at Greenwood Plaza.

What are you looking forward to about the new venue?

I’m looking forward to taking my brand to one of Sydney’s most iconic venues, some of my all-time favourite Aussie rock bands have performed there and you can expect to see some tribute burgers as specials to these all-time greats!!

What new burgers can we expect?

The new burgers I’m bringing will be a mix of classic specials plus some really interesting new ones. I plan on pushing the boundaries with a few of my upcoming specials.

What was your experimenting and creating process like for the new menu?

This menu I am running will have some classics on it that have been fine-tuned over the past year and a half. I have experimented with different ratios of cuts of meat in my mince, different adjustments to sauces, different variations of pickles and we recently sourced the same cheese In-N-Out uses. To create my ideal ratio of ingredients in the buns has made me source 4 different vegetable suppliers ensuring the highest quality.

What is your signature burger?

What I have now, I believe for me is my ultimate signature burger in The J, people recognize me for The Primo, which is one of my staples, but The J has been formulated in my opinion to everything a good burger should be:

Signature Wagyu, freshly picked Iceberg, Tomatoes, American cheese (same as In-N-Out), signature Wagyu blend, Westmont dill pickles, soft and a fluffy milk bun. My recommendation is adding the crispy AF bacon and a double patty, which is made even better with a quality IPA from the huge list Annandale Hotel has on offer.

Sauces is my specialty even back when I was a chef I loved working on sauces and creating existing ones.

What did you learn from trying all the big burger spots across Sydney this past week?

On my #BurgerBenderByJosh I learned that there are some seriously good burgers around Sydney, Sydney siders are truly spoilt for choice. There is a lot of competition to be up against.

Will there be sides again?

Yea there will be sides, and this time I’m going to be bringing some of the most exciting sides yet.
