The Long Room transforms into The George on Collins

The iconic George building’s basement bar, The Long Room, recently underwent a huge $4million transformation to become The George on Collins. During its 12 years of operation, the bar was a hotspot for after work drinks for many of Melbourne’s young corporate hustlers. But owners Greg Kahan and Simon Jones decided it was due time for them to expand their customer base, and revamp the night-time venue into an all-day refined dining area.

Rather than following the currently on-trend ‘industrial-chic’ theme featured in countless Melbourne bars, the award-winning design studio Hecker Guthrie, have dressed the interiors of The George on Collins with a light, comforting theme featuring plenty of warm earthy tones and textures. As a result, one can hardly tell they’re sitting in a basement.

At the centre of the freshly renovated space is a striking dark granite bar, softly lit by a row of Davide Groppi’s sleek pendant light fixtures, and lined with plush grey bar stools. Those seeking a little more comfort or privacy, can choose between stylish dining booths lining the crisp white walls, a handful of lounge areas, or a private function room at the back.

In line with the physical renovation, a brand-new food & beverage menu has been created for the venue by mixologist Sebastian Costello (Bad Frankie), sommelier Ainslie Lubbock (The Royal Mail Hotel, Attica), and head chef Tom Brockbank. Most of the cocktails on offer are modern twists on timeless classics such as the Collin St. Mule ($18) – a berry driven twist on the famous Moscow Mule, or the Roguish Tendencies ($22) – the classic martini updated with thyme infused honey, savoury Regal Rogue Daring Dry Vermouth, and sweet Cocchi Americano.
