Pancake alert: Famous Japanese chain ‘Gram’ opens in Sydney

If you’ve ever joined the long queue of hungry locals and tourists aching for their chance to try jiggly soufflé pancake at Gram Café & Pancakes in Japan then you’ll know that their Australian debut is a big deal.

How big? Certainly bigger than the towering triple-stack of wobbly pancakes the chain has been pumping out since 2014. Gram is widely known as one of the best places to try the coveted stack, and know they’ve spread the love to Australian have their first store opening in Sydney’s Chatswood Interchange.

Gram, which now has over 60 stores across Asia and North America, was started in Osaka by Takeshi Takata. And he’s sent Gram’s Executive Chef to Australia to make sure quality remains in-tact.

There are 8 varieties of pancakes on the menu, including tiramisu, matcha, caramelised banana and
honey apple with earl grey cream. The menu also stars a line-up of French toast, savoury pancake, parfaits and smoothies.

The star of the show is, of course, the soft spongey and sky-high three-tiered pancake stacks, which have a springy consistency that melts in the mouth. There’s plenty of secrets behind the recipe, but one that people have uncovered is the egg-white heavy batter, which is whipped, steamed under metal domes, and cooked until golden.
