Dan Hunter’s first cookbook is a fascinating insight into Brae, its recipes and Australian produce

Colourful, insightful, witty and one of the most important cookbooks you’ll find in Australia this year. That’s how I’d describe Brae: Recipes and Stories from the Restaurant by Dan Hunter, a 256-page and incredibly comprehensive book with recipes and stories from the acclaimed chef and his regional VIC restaurant. Now one of the most acclaimed restaurants in the world, and currently the number one restaurant in Australia, Brae has enjoyed a swift rise in its global profile, and learning more about it through this essential book is fascinating.

Its Dan’s first book and also the first Australia chef monograph published by Phaidon, who have to date published books from similarly acclaimed chefs like Massimo Bottura, René Redzepi and Magnus Nilsson. Dan joins that elite list of names by extending the story beyond the dishes, offering stories from his youth, his journey to becoming a chef, and his journey now that he is one of most well-known names in culinary world. Of particular interest are the stories of the land surrounding Brae and the restaurant’s deep connection to it, and appreciation of it.

“We chose Dan for our first Australia chef monograph because Brae is so much more than what’s on the plate”, offered Phaidon editorial director Emilia Terragni. “The Brae experience brings together Dan’s talent and creativity as a chef with the extraordinary landscape and all of the uncertainties and vulnerabilities that come with it. To harness all of this and deliver something so exceptional like Brae it’s no wonder Dan’s peers have chosen the restaurant to be the best in the country.”

Brae: Recipes and Stories from the Restaurant explores Dan’s journey to Brae and incorporates recipes as well as unique stories and philosophies that have shaped and influenced him as a chef and the Brae dining experience. It features 150 striking photographs of the serene Australian landscapes that surround Brae including breathtaking shots of the changing seasons, staff tending the gardens, and photographs of the beautifully crafted dishes served at Brae.

Brae: Recipes and Stories from the Restaurant is now available for an RRP of $75.00. It can be purchased online HERE..
