Feel like a pizza topped with ribs, brisket and poached egg? Head west to the Sydney suburb of Carlingford and you’ll find Pizza Fresh Co, a brand new pizzeria unafraid to break tradition and think outside of what one would usually see heating up in the oven. The team behind it have approached pizza making with a broad scope, even allowing for customers to go H.A.M when making their own from a huge range of ingredients. You know you want to put all the ribs on all the pizzas – as far as OTT DIY goes there ain’t no such thing as halfway cooks.
The team behind it have honed their skills as part of various local favourites including Bondi’s Aqua Bar and Paddington’s Arthur’s Pizza, channeling more than 20 years of restaurant industry experience into this new venture.
“We’re delivering a fast, freshly made pizza that oozes personality, the answer to a market that’s grown tired of the typical pizza offering”, offers co-owner Vinnie Pedulla, a second-gen pizzaiolo whose families history with the food in Sydney dates back to 1978. His business partner, Nour Attala agrees, offering the notion that “Sydney’s food scene is no longer about chasing hats, [it’s] about doing the stuff that we enjoy – making awesome food and having fun”.
The likes of baby pork ribs and smoked beef brisket is just scratching the surface of the range of toppings Pizza Fresh Co are experimenting with, all placed on top of bases made in the traditional Italian style and cooked in a state-of-the-art oven that’s designed with speed in mind. All pizza will be made to order in four steps: diners choose a base – options including gluten free, traditional or wholemeal – following by a selection of sauce, toppings and cheese. Exploration with the fully customisable menu seems to be encouraged, pulling on the inspiration of 90s hip hop to allow guests to ‘freestyle’ their own pizza style.
