Sydney’s new luxury boutique hotel is kicking off the warmer season by celebrating with summer’s most beloved spirit – Gin. West Hotel, a collection from Hilton that launched in February earlier this year, have teamed up with the local distillery, Archie Rose Distilling Co., to bring a gin-infused bar menu and summer cocktail list to the hotel’s restaurant, Solander Dining and bar.
Archie Rose have added their gin expertise to craft a bespoke Summer of Gin bar menu that will be available at Solander. The menu features bite-sized bar food infused with gin and native botanical rubs, and complementary cocktails using Archie Rose gins.
You can enjoy the Summer of Gin menu everyday, while on Fridays, the bar hosts live music in the open air jungle. New on the menu includes the Archie Rose-infused chicken wings, gin-cured salmon gravlax, and ginger gin chilli prawn dish, with dishes priced between $14 and $19.
The Summer of Gin cocktails include the Lemon Myrtle Gin Fizz ($21), with flavours of lemon myrtle, orange blossom and coconut, and a Chai Bramble served over ice with elderflower, lime and berries ($20).
The collaboration celebrates the launch of Archie Rose’s two new limited-edition summer gins ‘Bush’ and ‘Coast. They feature distillates made from sustainably sourced local and wild foraged ingredients such as lemon myrtle, pink peppercorn, sea lettuce and farmer’s friend.
Solander Dining and Bar is housed inside the new West Hotel on Sussex Street, and boasts an upmarket dining experience serving up botanically-inspired cocktails. A strong botanical theme runs throughout the hotel with a beautiful open-air jungle atrium and white Waratah motif in the lobby.
The Summer Of Gin menu is available over the spring and summer months.
