A cookie dessert pop up has opened in Potts Point (Sydney)

From now until the 26th August Bistro Rex in Potts Point will play host to a very special cookie dessert pop-up, a collaboration between Byron Bay Cookies and dessert diva Christine Manfield. Brought to life to celebrate the brand’s new Ginger Spice Cream Cookie (ginger biscuits sandwiched with a nutmeg spiced fruirt mince cream), the temporary cookie-filled shop gives Sydneysiders a chance to preview the flavour ahead of its September 1st release.

To make it a bit more exclusive, Manfield has created a dessert only for the pop-up, served up with a suggested pairing of a glass of 2015 Eric Bordelet Poire Authentique pear cider. That dessert is Christine’s Pear & Ginger Spice Crumble, crafted in collaboration with Bistro Rex’s award winning chefs, resulting in a complex treat that combines fragrant layers of ginger poached pears, fruit mince and lemon cream, with a topping of decadent crumble mix using Ginger Spice biscuits. The dessert will be sold for $14pp.

“I had a lot of fun experimenting with the flavours and textures of this cookie to develop something Byron Bay Cookies hadn’t done before”, said Christine. “I’m pleased to be working with Jo & Michelle from Bistro Rex to bring to life such a delicious collaboration”.

A portion of the proceeds from each dessert sold during the pop up’s duration will be donated to Ovarian Cancer Australia. Bookings are encouraged and can be made HERE or by calling 02 9332 2100.
