F&L News: Go foraging for mushrooms with the chefs from Studio Neon (Sydney)

On Sunday 3rd May (and just announced: Sunday 24th May due to overwhelming demand), an expedition to the magical State Forest of the Southern Highlands will take place. The purpose of the expedition: forage for rare mushrooms and feast in the forest. Guests will be taken on this journey by the chefs from Sydney's increasingly popular Studio Neon who have teamed up with foraging expert Diego Bonetto from Wild Stories for these tours.

The tour involves guests departing Redfern bright and early at 7am before heading south on the Hume Highway to the Southern Highlands, two and a half hours out of Sydney. The morning will be full of education as to participants learn how to identify edible mushrooms and harvest them. Bonetto has nearly two decades experience collecting mushrooms all over the world and his workshops in the forest are highly acclaimed by Australian chefs and those in the hospitality industry, so the tour is in good hands.

Foraging will be following by lunch in the pine forest which will be prepared by the very talented Aaron Teece and Richard Robinson of Studio Neon; seasoned foragers themselves. During lunch the boys will explain how best to prepare, cook, and preserve the mushrooms collected.

"At Studio Neon we place a large emphasis on customer education. We use foraging as a means of keeping in touch with nature and keeping on the pulse of what's in season and the speed at which things are changing," Teece says.

The trip will return to Sydney by 3pm and guests will be provided with a box to take home their haul of wild mushrooms.
