Ume Burger opens on Barangaroo’s Wulugul Walk (Sydney)

If you to too have felt the pains and pangs of arriving to Kerby Craig’s wildly popular burger pop ups, which he began two years ago, only to hear the dreaded phrase “sold out” over and over again then you’d understand how long many have waited for the fine-dining chef to turn to burgers in a permanent capacity. Finally Craig and chef Regina Jose have ensured that no longer will we have to miss out on these uniquely Japanese style burgers. First Craig opened Bar Ume in Surry Hills a few months ago, and now the duo have given Barangaroo it’s first burger-centric opening with Ume Burger – trust the shiny new precinct to aim high with their obligatory burger joint.

There are four burgers on the menu, each fans of Craig’s pop ups will be familiar with. You’ve got the signature Ume Burger with Ume’s own grilled beef patty, Wagyu mince, sauce, truss tomato, onion, mayo, and American cheese; the Ebi Burger with handmade prawn katsu, Japanese tartare, and shredded cabbage; Menchi Burger with homemade pork katsu, mild mustard, tonkatsu sauce, yuzu-kosho mayo, Spanish onion, and shredded cabbage; and the Kakiage Burger (feature image), with a vegetable fritter, nori mayo, shredded cabbage, and tonkatsu sauce. Holding all these fillings in is a specially made Hokkaido-style milk bun, which Craig came up with in collaboration with awarded pastry chef John Ralley (Textbook Patisserie).

Sides featured at Ume Burger include hot pieces of Koji Fried Chicken, a serving of Hot Chips with umami salt, and House-Made Kimchi.

Though it isn’t just burgers and their sides at the new venue, Craig and Jose have including house-made Japanese sodas (think passionfruit ginger, yuzu brown sugar, and strawberry vanilla) along with a selection of Japanese whiskies, sake, wines, and beers. They’ve even got a traditional Japanese vending machine with canned sodas (and Calpis). Pick your drink of choice and wash down one (or more) of those signature burgers, but it’d be a good choice to pace yourself, you’d want to save room for dessert.

Kerby hasn’t gone the ice cream sandwich route for a sweet finish, instead installing a freakin’ do-it-yourself soft serve station with rotating flavours like strawberry and shiso, or lavender and white chocolate. Just take that cone and fill it up with whatever is on the menu at the time, just don’t forget to nail that curled peak.
